Preparing the Fish

Make the Batter
In a mixing bowl, combine the flour, baking powder, salt, and black pepper. Slowly whisk in the beer until the batter is smooth and free of lumps.

Heat the Oil
In a deep pan, heat the oil to 350°F (175°C). Use a thermometer for accuracy.

Coat the Fish
Dip each cod fillet into the beer batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered cod into the hot oil. Fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Cut the Potatoes
Peel and cut the potatoes into even sticks. Soak them in cold water for about 30 minutes to remove excess starch.

Fry the Potatoes
Drain and pat the potatoes dry. Fry them in the same oil at 350°F (175°C) until they are golden and crispy, approximately 5-7 minutes. Season with salt while they are still hot.

In a bowl, combine mayonnaise, chopped pickles, lemon juice, capers, and fresh dill. Stir until well mixed. Adjust seasoning as needed.
