Pimento Cheese

    Combine Ingredients

    In a large mixing bowl, combine the shredded Tillamook cheddar cheese, softened cream cheese, and mayonnaise.

    Add Flavorings

    Add the chopped pimentos, garlic powder, onion powder, salt, black pepper, and hot sauce to the bowl.

    Mix Well

    Using a hand mixer or fork, mix all ingredients together until well combined and creamy.

    Chill

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Guacamole

    Prepare Avocados

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

    Mash Avocados

    Use a fork to mash the avocados to your desired consistency (smooth or chunky).

    Add Ingredients

    Add lime juice, chopped red onion, diced tomato, chopped cilantro, salt, and black pepper to the mashed avocados.

    Stir all ingredients together until well combined. Taste and adjust seasoning if necessary.

    Serve the guacamole immediately or cover with plastic wrap directly on the surface to prevent browning.

Serving

    Arrange the chilled pimento cheese and guacamole in separate bowls. Serve with tortilla chips on the side for dipping.
