    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring the water to a boil over medium-high heat.

    Cook the Eggs

    Once boiling, cover the pot, remove it from heat, and let the eggs sit for 12-14 minutes.

    Cool the Eggs

    After the time is up, transfer the eggs to a bowl of ice water to cool for at least 5 minutes.

    Peel the Eggs

    Once cooled, gently tap the eggs on a hard surface and peel the shells off under running water to make peeling easier.

Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine the pimento cheese, chopped peppadew peppers, chopped chives, salt, and black pepper. Mix until well combined.

    Add Egg Yolks

    Slice the peeled eggs in half lengthwise and carefully remove the yolks. Add the yolks to the mixing bowl and mash everything together until smooth.

Assembly

    Fill the Egg Whites

    Using a spoon or piping bag, fill each egg white half with the pimento cheese mixture.

    Garnish

    Top each deviled egg with a whole chive for garnish and place them on a serving platter.
