    Marinate the Chicken

    In a large mixing bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Coating

    In another bowl, mix together the all-purpose flour and cornstarch. Remove the chicken from the marinade, allowing excess buttermilk to drip off, then dredge the chicken in the flour mixture, ensuring an even coating.

    Fry the Chicken

    In a deep skillet or large pot, heat the vegetable oil over medium-high heat. Once hot (about 350°F or 175°C), carefully add the coated chicken pieces. Fry until golden brown and cooked through, about 8-10 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Remove and drain on paper towels.

    Prepare the Batter

    In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, beat the eggs, then mix in the milk, melted butter, and vanilla extract until combined.

    Combine Wet and Dry Ingredients

    Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.

    Cook the Waffles

    Preheat a waffle iron according to the manufacturer's instructions. Once ready, pour enough batter to cover the waffle iron surface and close the lid. Cook until golden brown, about 5 minutes. Remove and repeat with the remaining batter.
