Preparation of Topping
- 1
Prepare the Tomatoes
If using preserved cherry tomatoes, drain them from their liquid. If you prefer, you can chop them into halves or quarters for easier serving.
- 2
Mix the Cheese
In a small bowl, gently mix the honey goat cheese until it's creamy and smooth. You can add a pinch of salt and black pepper to enhance the flavor.
- 3
Combine Topping Ingredients
In another bowl, combine the preserved cherry tomatoes with the balsamic glaze. Stir gently to coat the tomatoes evenly.
Preparing the Bread
- 4
Slice the Baguette
Cut the baguette into ½ inch thick slices on a diagonal for a larger surface area.
- 5
Toast the Bread
Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet, brush both sides with olive oil, and toast in the oven for about 5-7 minutes until golden and crispy.
Assembly
- 6
Assemble the Bruschetta
Spread a generous layer of the honey goat cheese on each toasted baguette slice. Top with the balsamic-glazed preserved cherry tomatoes.
