    Cook the Sausage

    In a skillet over medium heat, add the sausage. Cook, breaking it apart with a spatula, until browned and fully cooked, about 5-7 minutes. Remove from skillet and set aside.

    Scramble the Eggs

    In the same skillet, add olive oil. Crack the eggs into a bowl, add salt and black pepper, and whisk until well combined. Pour the eggs into the skillet and cook, stirring gently, until just set but still creamy, about 3-4 minutes. Remove from heat.

    Grate the Cheese

    While the eggs are cooking, grate the cheddar cheese and set aside.

Assembly

    Fill the Tortilla

    Lay a large flour tortilla flat on a clean surface. In the center, add half of the scrambled eggs, half of the cooked sausage, and half of the grated cheddar cheese.

    Add Pico de Gallo

    Top the fillings with half of the pico de gallo.

    Roll the Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely. Repeat with the second tortilla.

    Cut the burritos in half if desired and serve immediately with extra pico de gallo on the side.
