Preparing the Eggs

    In a skillet, heat the butter or oil over medium heat. Crack the eggs into the skillet. Season with salt and pepper. Cook to your desired doneness (sunny side up, over easy, scrambled, etc.). Remove from heat and set aside.

Making the Corn Waffle

    Prepare the Waffle Batter

    In a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the milk, egg, and melted butter. Combine the wet and dry ingredients, stirring until just mixed.

    Preheat your waffle iron according to the manufacturer's instructions. Spray with non-stick spray if necessary. Pour the batter into the waffle iron and cook until golden brown. Remove and keep warm.

Making Honey Cinnamon Butter
