Method
Cooking the Salmon

Prepare the Salmon
Season the salmon fillets with salt and black pepper on both sides.

Making the Quinoa Salad

Cook the Quinoa
Rinse quinoa under cold water. In a pot, bring vegetable broth to a boil. Add quinoa, cover, and reduce heat to low. Cook for about 15 minutes until liquid is absorbed. Remove from heat and let it sit for 5 minutes.

Prepare the Salad Ingredients
Chop roasted red peppers, red onion, and zucchini into small pieces. Finely chop the mint and basil leaves.

Combine the Salad
In a large bowl, fluff the cooked quinoa with a fork. Add the chopped vegetables, mint, basil, lemon juice, salt, and black pepper. Mix well to combine.
Making the Creamy Mutabal Sauce

Roast the Eggplant
Prick the eggplant with a fork and roast it in the oven at 400°F (200°C) for about 30-40 minutes until soft. Let it cool, then scoop out the flesh.

Making the Sesame Crackers

Prepare the Dough
In a bowl, mix sesame seeds, flour, olive oil, water, and salt until a dough forms.

Shape the Crackers
Roll out the dough on a floured surface to about 1/8 inch thick. Cut into desired shapes and place on a baking sheet.

Bake the Crackers
Preheat the oven to 350°F (175°C) and bake the crackers for about 15-20 minutes until golden brown. Let cool.
