    Soak Glass Noodles

    Soak the glass noodles in warm water for about 15 minutes until soft. Drain and set aside.

    Prepare Vegetables

    Slice the shiitake mushrooms, napa cabbage, scallion, and butternut squash into thin strips. Rinse the bean sprouts and edamame under cold water.

    Fry Butternut Squash

    Heat a pan over medium heat with a little oil. Add the butternut squash and sauté until golden brown and tender, about 5-7 minutes. Remove and set aside.

    Crispy Brown Beech Mushrooms

    In the same pan, add more oil if necessary and fry the brown beech mushrooms until crispy, about 4-5 minutes. Remove and drain on paper towels.

    Sauté Vegetables

    In the same pan, add a little more oil if needed. Sauté the shiitake mushrooms for 2 minutes. Then add the napa cabbage, scallion, bean sprouts, and edamame. Stir-fry for another 3-4 minutes until vegetables are tender.

    Combine Noodles and Sauce

    Add the soaked glass noodles to the pan with the sautéed vegetables. Pour in the house fermented hot Thai sauce and toss everything together to combine, cooking for an additional 2-3 minutes.

Serving

    Plate the Dish

    Serve the Pad Woon Sen in bowls. Top with the fried butternut squash, crispy fried brown beech mushrooms, and toasted walnuts for garnish.
