Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water (1.5 cups) and sugar (1 tsp). Sprinkle the active dry yeast (2 tsp) on top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Ingredients

In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tbs). Make a well in the center and pour in the activated yeast mixture and olive oil (0.5 cups).

  3. 3

    Knead Dough

Mix the ingredients together until a shaggy dough forms. Transfer it to a lightly floured surface and knead for about 8-10 minutes until the dough is smooth and elastic.

  4. 4

    First Rise

Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Baking

  1. 5

    Prepare Baking Pan

Preheat your oven to 425°F (220°C). Grease a baking pan (about 9x13 inches) with olive oil.

  2. 6

    Shape Dough

Once the dough has risen, punch it down to release air. Transfer the dough to the prepared baking pan and stretch it out to fit the pan. If the dough resists, let it rest for a few minutes and then continue stretching.

  3. 7

    Add Toppings

Using your fingers, create dimples all over the surface of the dough. Drizzle extra virgin olive oil (2 tbs) on top, and sprinkle with fresh rosemary (2 tbs) and sea salt (1 tsp).

  4. 8

    Second Rise

Cover the dough with a cloth and let it rise again for about 20-30 minutes.

  5. 9

    Bake Focaccia

Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through. Remove from the oven and let cool slightly before slicing.
