Method
Fries Preparation

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips to create fries.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch. This will help make the fries crispier.

Preheat the Ghee
In a large pot, heat the ghee over medium heat until hot.

Fry the Potatoes
Drain the potatoes and pat them dry. Carefully add the fries to the hot ghee in batches, frying until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle them with salt and black pepper to taste.
Toppings Preparation

Prepare Chives
Chop the chives finely and set aside.

Add Parmesan
Once the fries are drained, immediately sprinkle the grated Parmesan cheese over the fries so that it melts slightly from the heat.

Sprinkle the chopped chives over the cheesy fries for added flavor and presentation.
Basil Aioli Preparation

Blend the Aioli
In a blender, combine mayonnaise, fresh basil, lemon juice, garlic clove, and salt. Blend until smooth and creamy.

Transfer the basil aioli to a small bowl and serve alongside the Garlic Ghee Fries for dipping.
