Preparing the Fries

    Cutting the Potatoes

    Wash and peel the potatoes. Cut them into thin strips (fries) and soak them in cold water for at least 30 minutes.

    Preheating the Ghee

    In a large pot, heat the ghee over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

    Frying the Potatoes

    Drain the potatoes and pat them dry with paper towels. Carefully add the potatoes to the pot with hot ghee. Fry until golden brown and crispy, about 5-7 minutes. Remove fries and drain on paper towels.

    While the fries are still hot, season them with salt and black pepper to taste.

Preparing the Toppings

    Grating Parmesan

    Grate the Parmesan cheese using a fine grater and set aside.

    Finely chop the chives and set aside for garnishing the fries.

Making the Basil Aioli

    In a mixing bowl, combine mayonnaise, fresh basil, lemon juice, garlic powder, salt, and pepper.

    Using an immersion blender or food processor, blend the ingredients until smooth and creamy. Adjust seasoning as needed.

    Refrigerate the basil aioli for at least 20 minutes before serving to allow the flavors to meld.

    Place the hot garlic ghee fries on a serving platter. Sprinkle the grated Parmesan cheese and chopped chives generously over the fries.
