Prepare the Basil Aioli
In a mixing bowl, combine the mayonnaise, chopped fresh basil, salt, and black pepper. Mix well until combined. Set aside in the refrigerator to allow flavors to meld.

Prepare the Mushrooms
Clean the lion's mane mushrooms gently with a damp cloth. Slice them into thick pieces.

Prepare the Batter
In a bowl, whisk together the flour, cornstarch, salt, and black pepper. In another bowl, beat the egg and add the water. Combine the wet and dry ingredients until a smooth batter forms.

Fry the Mushrooms
Heat the vegetable oil in a deep frying pan over medium heat. Dip each mushroom slice into the batter, ensuring they are well coated, and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich
On the brioche bun, spread a generous amount of the basil aioli. Add lettuce leaves, fried mushroom slices, and house-made pickles. Top with the other half of the bun.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin fries.

In a large frying pan, melt the ghee over medium heat. Add minced garlic and sauté until fragrant. Add the potato fries, season with salt and black pepper, and cook until golden and crispy, about 10-15 minutes, turning occasionally.
