Focaccia

    In a bowl, mix warm water with active dry yeast and let it sit for about 5 minutes until frothy. In a separate large bowl, combine all-purpose flour and salt. Gradually add the yeast mixture and olive oil to the flour, mixing until combined.

    Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. Optionally, incorporate fresh rosemary for added flavor.

    Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

    Shape and Bake

    Once risen, punch down the dough and spread it on a greased baking sheet. Let it rest for an additional 30 minutes. Preheat the oven to 400°F (200°C) and bake for 20-25 minutes or until golden brown.

Filling

    Slice the onion thinly. In a skillet, melt the butter over medium heat, add the onions and a pinch of salt. Cook gently, stirring occasionally, for about 15-20 minutes, until they are golden and caramelized.

Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water, ensuring the bowl doesn't touch the water. Whisk continuously until the mixture thickens and doubles in volume.
