Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, ground cinnamon, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, combine the vegetable oil, eggs, and vanilla extract. Whisk until smooth and well-blended.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until just combined. Do not over-mix.

    Add Carrots and Nuts

    Fold in the grated carrots and chopped walnuts or pecans until evenly distributed.

    Bake the Cake

    Divide the batter evenly between two greased 9-inch round cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.

    Make the Frosting

    In a mixing bowl, beat the softened cream cheese and unsalted butter together until smooth and creamy.

    Add Sugar and Vanilla

    Gradually add the powdered sugar, mixing until well combined. Stir in the vanilla extract.

    Frost the Cake

    Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.
