Carnitas Preparation

    Prepare the Pork

    In a slow cooker, place the pork shoulder, garlic, and onion. Pour the orange juice over the top, and add cumin, salt, black pepper, oregano, and bay leaves.

    Cook the Carnitas

    Cover and cook on low for 8 hours or until the pork is tender and can be shredded easily with a fork. Once done, shred the pork and let it soak in the juices.

Homestyle Potatoes

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. In a large skillet, heat olive oil over medium heat.

    Cook the Potatoes

    Add the diced potatoes to the skillet, sprinkle with paprika, salt, and pepper. Cook for about 15-20 minutes, stirring occasionally, until golden brown and tender.

Omelette Assembly

    Sauté the Vegetables

    In another skillet, add butter and heat over medium heat. Add the diced bell peppers and onion, sauté until soft, about 5 minutes.

    Whisk the Eggs

    In a bowl, whisk the eggs until well beaten. Season with a pinch of salt and pepper.

    Cook the Omelette

    Pour the eggs into the skillet with the sautéed vegetables, and gently stir to combine. Cook until the eggs are set but still soft.

    Add the Carnitas and Queso

    Add a generous portion of the shredded carnitas and sprinkle queso fresca on one half of the omelette. Fold the omelette over and let it cook for another minute.
