Preparation of Base

    Rinse and Cook Quinoa

    In a fine-mesh strainer, rinse the quinoa under cold water for about 2 minutes to remove bitterness. In a medium saucepan, combine the rinsed quinoa and 2 cups of water. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit, covered, for an additional 5 minutes.

    Fluff the Quinoa

    After resting, fluff the quinoa with a fork and drizzle with 1 tablespoon of olive oil.

    Sauté Vegetables

    In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced bell pepper and chopped red onion, and sauté for about 5 minutes until they start to soften.

    Stir in the spinach and cherry tomatoes, cooking for an additional 3-4 minutes until the spinach is wilted and tomatoes are slightly softened.
