Cheesecake Base

Method

Cheesecake Preparation

  1. 1

    Prepare the Oven

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or oil.

  2. 2

    Mix the Cheesecake Filling

In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy. Add the buttermilk, vanilla extract, and eggs one at a time, beating after each addition until incorporated. Finally, mix in the gluten-free flour until just combined.

  3. 3

    Bake the Cheesecake

Pour the cheesecake batter into the prepared springform pan. Bake in the preheated oven for 45-50 minutes, or until the center is set and the edges are slightly golden.

  4. 4

    Cool the Cheesecake

Once baked, turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour before transferring it to the refrigerator. Chill for at least 4 hours or overnight for the best results.

Berry Compote Preparation

  1. 5

    Prepare the Berries

In a medium saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice. Stir gently to combine.

  2. 6

    Cook the Compote

Bring the mixture to a simmer, then reduce the heat to low. Cook for about 10-15 minutes until the berries have broken down and the mixture has thickened slightly.

  3. 7

    Cool the Compote

Remove from heat and let the berry compote cool completely. It can be stored in the refrigerator until ready to serve.

Streusel Topping Preparation

  1. 8

    Mix the Streusel Ingredients

In a bowl, combine the gluten-free flour, brown sugar, melted butter, and cinnamon. Mix until crumbly.

  2. 9

    Bake the Streusel

Spread the streusel mixture on a baking sheet and bake at 350°F (175°C) for 10-12 minutes, or until golden brown. Stir occasionally to ensure even baking.
