Bring to room temperature
Remove the 12-oz New York strip from the refrigerator and pat dry with paper towels. Let rest at room temperature for 30–45 minutes (no longer than 1 hour) so the interior warms slightly for even cooking.

Season
Just before cooking, season both sides generously with kosher salt (about 1 tablespoon total) and freshly ground black pepper. Press the seasoning gently into the meat so it adheres.

Sear
Add 1 tablespoon neutral oil to the hot pan and swirl to coat. Carefully lay the steak away from you into the pan. Sear without moving for 2.5–3 minutes until a deep brown crust forms. Flip and sear the other side for 2–2.5 minutes.

Baste and finish
Reduce heat to medium. Add 2 tablespoons unsalted butter, the crushed garlic cloves, and thyme sprigs to the pan. Tilt the pan slightly, and using a spoon, baste the steak continuously with the melted butter and pan juices for 1.5–3 minutes while cooking to your desired doneness. Use an instant-read thermometer to check temperature: 120–125°F for rare, 130–135°F for medium-rare, 140–145°F for medium.

Transfer the steak to a cutting board and loosely tent with foil. Let rest for 5–10 minutes to allow juices to redistribute (5 minutes for medium-rare, up to 10 minutes for medium).

Finish and slice
While resting, spoon any accumulated pan juices over the steak. If desired, sprinkle 1/4 teaspoon flaky finishing salt and 1 tablespoon chopped fresh parsley over the top. Slice the steak against the grain into 1/4-inch thick slices and serve immediately.
