Prepare spreads and cheese
Mix the shredded cheddar and gruyère in a small bowl so the cheeses are evenly distributed. In a separate small bowl or ramekin, combine the softened butter with garlic powder and black pepper. If using mayonnaise and Dijon, mix them together in another small bowl and set aside.

Assemble sandwiches
Lay out the four bread slices. Spread the butter mixture evenly on one side of each slice (this will be the outside that contacts the pan). On the inside (the unbuttered side) of two slices, spread about 1 tsp mayonnaise-Dijon mixture if using. Divide the cheese mixture evenly between the two sandwiches, piling it in the center but leaving a 1/4-inch border so the cheese doesn't squeeze out. Top with the remaining bread slices, buttered side facing out.

Grill the sandwiches
Place one sandwich in the skillet. Cook undisturbed for 3–4 minutes until the bottom is golden brown. Press gently with a spatula or a second pan to improve contact. Flip the sandwich and cook the other side for 2.5–4 minutes until golden and the cheese is melted. If the bread is browning too fast before the cheese melts, lower the heat and cover the pan loosely with a lid for 1–2 minutes to trap heat and speed melting. Repeat with the second sandwich.

Rest and slice
Transfer sandwiches to a cutting board and let rest 1 minute so the cheese sets slightly. Using a sharp knife, slice each sandwich diagonally or in half as preferred. Serve immediately.

Serving suggestions
Serve with tomato soup, pickles, or a simple side salad. For added flavor, drizzle a little hot sauce into the cheese before closing the sandwich or add thin tomato or cooked bacon slices during assembly (adjust ingredients accordingly).
