Prepare bread
Select the customer's preferred bread (white, wheat, rye, or roll). Lay two slices flat on a clean work surface or open the roll. If using a roll, slice through but not all the way through so it hinges.

Spread mayo
Evenly spread 1 tablespoon mayonnaise over the interior surface of one slice of bread (or the bottom half of a roll). Spread a light thin coat on the other slice/half if customer prefers mayo on both sides.

Assemble meats and cheese
Place 3 slices of ham in a slightly overlapping layer on the mayo-coated bread. On top of the ham, place 3 slices of turkey in a similar overlapping layer. Top the meats with 2 slices of Swiss cheese, arranging to cover the meat evenly.

Add produce and season
Place 3 tomato slices on top of the cheese. Sprinkle the tomato with 1/8 teaspoon salt and 1/16 teaspoon black pepper to enhance flavor. Top the tomato with 2 leaves of lettuce (romaine or iceberg), tearing the leaves to fit if necessary.

Close and cut
Close the sandwich by placing the remaining slice of bread (or roll top) over the lettuce. If desired, press gently to compress slightly. Cut the sandwich in half (diagonally or down the middle) to create the 1/2 portion presentation.

Optional plating and service
Place the half sandwich on a plate or deli paper. Add a pickle spear or side chips if requested. Serve immediately or wrap tightly for takeout to keep ingredients fresh.
