Preheat Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground ginger, salt, rolled oats, and shredded coconut until well combined.
Wet Ingredients

Cream Butter and Sugars
In another bowl, beat the unsalted butter, brown sugar, and granulated sugar together until light and fluffy.

Add Eggs and Vanilla
Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Combine and Bake

Combine Mixtures
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chopped walnuts and dried cranberries.

Scoop Cookies
Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
