Prepare Tofu

Press and Marinate Tofu
Press the tofu to remove excess water, then cut it into cubes. In a bowl, mix minced ginger, minced garlic, tamari sauce, and olive oil. Add tofu cubes and marinate for at least 30 minutes.

Cook Tofu
In a non-stick skillet, heat a little oil over medium heat. Add marinated tofu cubes and cook until golden brown on all sides, about 10-15 minutes. Set aside.
Cook Coconut Brown Rice

Prepare Rice
In a medium saucepan, combine brown rice, coconut milk, water, and salt. Bring to a boil over medium-high heat.

Simmer Rice
Reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.
Assemble Buddha Bowl

Combine Ingredients
In a large bowl or plate, layer the coconut brown rice, cooked tofu, mixed greens, cherry tomatoes, cucumber, and avocado.

Sprinkle sesame seeds on top and serve immediately.
