Spaghetti with Tomato-Garlic Sauce

Prep
Peel and finely dice the yellow onion. Peel and mince 4 garlic cloves for the sauce. Chop the fresh parsley and grate Parmesan if using. Measure out canned tomatoes, tomato paste and seasonings.

Boil pasta water
Bring 4 liters of water to a rolling boil in a large pot. Add 1 tablespoon salt to the water once boiling.

Cook spaghetti
Add 12 oz dried spaghetti to the boiling water and cook, stirring occasionally, until al dente according to package directions (usually 8–10 minutes). Reserve 1 cup of pasta cooking water, then drain the pasta and set aside.

Make sauce
While pasta cooks, heat 2 tbs extra-virgin olive oil in a large skillet or saucepan over medium heat. Add the diced onion and a pinch of salt; sauté until translucent, about 5 minutes. Add the minced garlic and cook, stirring, for 30–45 seconds until fragrant (do not brown). Stir in 1 tbs tomato paste and cook 1 minute to deepen the flavor. Add the 28 oz crushed tomatoes, 1 tsp dried oregano, 1 tsp dried basil, 1 tsp red pepper flakes, 1 tsp granulated sugar, 1 tsp salt and 1 tsp black pepper. Stir to combine, bring to a gentle simmer, and cook uncovered 10–12 minutes, stirring occasionally, until slightly thickened. Taste and adjust salt, pepper, or sugar as needed.

Combine pasta and sauce
Add the drained spaghetti directly to the sauce along with about 1/4–1/2 cup of the reserved pasta water to loosen the sauce. Toss gently over low heat for 1–2 minutes so the pasta absorbs some sauce. If sauce seems too thick, add more reserved pasta water, 1–2 tablespoons at a time, until desired consistency is reached. Stir in 2 tbs chopped parsley. Serve immediately with grated Parmesan on the side.

Prepare garlic butter
Preheat the oven to 400°F (200°C). In a small bowl, combine 6 tbs softened unsalted butter, 4 minced garlic cloves, 2 tbs chopped fresh parsley, 1 tsp salt and 1/4 tsp black pepper. Mix until smooth. Stir in 2 tbs grated Parmesan if using.

Bake
Place the prepared loaf cut-side-up on a baking sheet lined with foil. Bake in the preheated 400°F (200°C) oven for 8–12 minutes until butter is melted and edges are golden. For extra crispness, switch the oven to broil for 1–2 minutes—watch closely to avoid burning. Remove and let rest 1–2 minutes, then slice and serve alongside the spaghetti.

Brew tea
Bring 1 liter of water to a boil. Remove from heat and add 4 black tea bags. Steep 4–5 minutes for medium strength (longer for stronger). Remove tea bags, gently pressing them against the side of the pot to extract liquid but not squeeze bitter tannins.

Sweeten and chill
While tea is still warm, stir in 3 tbs granulated sugar (or equivalent simple syrup) until dissolved. Add 1/2 cup fresh lemon juice and 3 cups cold water, stir to combine. Transfer to a pitcher and refrigerate until chilled, about 30–45 minutes, or serve immediately over ice if preferred.
