    Activate yeast

    In a small bowl, combine warm water (105–115°F / 40–46°C), sugar, and active dry yeast. Stir gently and let sit 5–10 minutes until foamy and fragrant.

    Make dough

    In a large mixing bowl (or stand mixer bowl), combine the flour and salt. Add the foamy yeast mixture and 1 tablespoon olive oil. Mix until a shaggy dough forms, then knead by hand on a lightly floured surface for 6–8 minutes (or 4–5 minutes on medium speed with a dough hook) until smooth and elastic. If dough feels very sticky, add up to 2 tablespoons more flour, 1 tablespoon at a time.

    First rise

    Lightly oil a clean bowl, place the dough inside, cover with plastic wrap or a damp towel, and let rise in a warm draft-free spot until doubled, about 60–75 minutes.

    Preheat oven and prepare pan

    Place a pizza stone or inverted baking sheet on the middle rack and preheat the oven to 475°F (246°C) for at least 30 minutes. If using a baking sheet, lightly dust it with the cornmeal or flour.

    Shape crust

    Punch down the risen dough, transfer to a lightly floured surface, and shape into a 12-inch round for a medium pizza. Use your hands to gently press and stretch the dough to about 12 inches, leaving a slightly thicker rim for the crust. Transfer to a peel or the prepared baking sheet dusted with cornmeal.

    Prepare chicken

    If your chicken is not pre-seasoned, toss the cooked shredded/diced chicken with 3 tablespoons of the barbecue sauce, the black pepper, and the crushed red pepper flakes in a bowl so it is evenly coated but not saturated.

    Assemble pizza

    Brush the stretched dough lightly with 1 teaspoon olive oil to help prevent sogginess. Spread the remaining barbecue sauce (about 5 tablespoons) evenly over the dough, leaving a 1/2-inch border for the crust. Sprinkle half of the shredded mozzarella evenly over the sauce. Distribute the sauced chicken across the pizza. Scatter the thinly sliced red onion over the chicken, then top with the remaining mozzarella and the smoked gouda/cheddar (if using).

    Bake

    Slide the pizza onto the preheated stone or place the baking sheet in the oven. Bake at 475°F (246°C) for 10–12 minutes, until the crust is golden and cheese is bubbly and lightly browned. Rotate halfway through baking for even color if your oven has hot spots.

    Remove the pizza from the oven and let rest 2 minutes. Sprinkle the chopped cilantro over the top, then slice and serve. Optionally drizzle a little extra barbecue sauce over the slices before serving.
