    Activate and mix

    Combine warm water (about 105–115°F / 40–46°C), sugar, and instant yeast in a small bowl. Let sit 5 minutes until foamy. In a large bowl or mixing bowl, whisk together flour and salt. Add the foamy yeast mixture and 1 tablespoon olive oil to the flour. Mix with a wooden spoon until a shaggy dough forms.

    Knead

    Turn the dough out onto a lightly floured surface and knead for 6–8 minutes until smooth and elastic. If using a stand mixer, knead with the dough hook on medium speed for 4–5 minutes. If dough is sticky, sprinkle up to 2 tablespoons more flour, but avoid adding too much.

    First rise

    Form the dough into a ball, lightly oil the inside of a bowl with the remaining 1 tablespoon olive oil, place the dough in the bowl, and cover with plastic wrap or a damp towel. Let rise in a warm, draft-free place for 1 to 1 1/2 hours, or until doubled in size.

    Shape

    Punch down the dough and divide if making two smaller pizzas (this recipe makes one large 12–14-inch pizza). On a lightly floured surface, stretch or roll the dough to a 12–14-inch circle with a slightly thicker rim for the crust. Transfer to a pizza peel or sheet pan dusted with semolina or cornmeal.

    Prepare sauce

    Mince the garlic. In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant (do not brown). Add the crushed tomatoes and tomato paste, stir to combine. Add dried oregano, dried basil, red pepper flakes, salt, and black pepper. Simmer gently for 8–10 minutes to thicken slightly, stirring occasionally. Taste and adjust seasoning. Remove from heat and let cool slightly.

    Assemble sauce on dough

    Spread 1/2 to 3/4 cup of the sauce evenly over the stretched dough, leaving a 3/4–1 inch border for the crust.

    Preheat oven

    Place a pizza stone or inverted heavy baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes so it is very hot. If your oven cannot reach 500°F, preheat to the highest temperature available and allow extra preheat time.

    Add cheese and toppings

    Evenly sprinkle the shredded mozzarella over the sauced dough. Arrange the thinly sliced smoked ham over the cheese in an even layer. Distribute the thinly sliced sweet pickles and sliced red onion across the pizza. Lightly season the top with 1/4 teaspoon black pepper. Drizzle or brush the exposed crust with the reserved 1 tablespoon olive oil.

    Bake

    Carefully slide the pizza onto the preheated stone or baking sheet. Bake for 7–10 minutes (depending on oven and stone temperature) until the crust is golden and blistered in spots and the cheese is melted and bubbling. Rotate once halfway through baking for even color.

    Finish and garnish

    Remove the pizza from the oven and transfer to a cutting board. Let rest 2 minutes. Sprinkle the chopped fresh parsley over the hot pizza. Slice and serve immediately.
