Prepare roll
Slice the 6-inch sub roll lengthwise but leave a hinge so it opens like a book. If desired, lightly toast the cut sides in a dry skillet or toaster for 1β2 minutes until slightly golden.

Spread condiments
Spread 1 tablespoon mayonnaise evenly on the bottom half of the roll and 1/2 teaspoon yellow mustard on the top half.

Assemble sandwich
Layer the 3 oz sliced turkey evenly along the bottom half of the roll. Top turkey with 1 slice of provolone cheese. Add shredded romaine (about 1/2 cup) on top of the cheese, then arrange 3 tomato slices, 2 thin rings of red onion, and 3 pickle slices.

Finish and season
Season the assembled sub lightly with 1/8 teaspoon salt and 1/8 teaspoon black pepper. Close the roll, press gently to compact, and cut in half on a bias if desired. Serve immediately.

Combine salad ingredients
In a medium bowl, combine 2 cups mixed salad greens, 1/4 cup thinly sliced cucumber, 6 halved cherry tomatoes, 2 tablespoons shredded carrot, and 1 tablespoon thinly sliced red onion. Toss gently to mix.

Make vinaigrette
In a small bowl or jar, whisk together 1 tablespoon olive oil, 1/2 tablespoon red wine vinegar, 1/4 teaspoon Dijon mustard, 1/4 teaspoon honey, 1/8 teaspoon salt, and 1/8 teaspoon black pepper until emulsified.

Dress salad and finish
Drizzle the vinaigrette over the salad (use all or to taste) and toss lightly to coat evenly. Top with 2 tablespoons croutons just before serving so they stay crisp. Serve alongside the prepared 6" sub.
