Preparing the Tartar Sauce

    Mix the Ingredients

    In a medium bowl, combine the mayonnaise, finely chopped pickles, finely chopped capers, and lemon juice. Mix well until all ingredients are evenly blended.

    Season the Sauce

    Add salt and black pepper to taste. Stir to combine. Adjust seasoning if necessary. Cover and refrigerate until ready to serve.

Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips to create fries.

    Preheat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the cut potatoes to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove from oil and drain on paper towels. Season with salt immediately.

Preparing the Fish

    Make the Batter

    In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, whisking until the batter is smooth and thick.

    Heat the Oil

    In a deep pot, heat the vegetable oil to 350°F (175°C).

    Batter the Fish

    Dip each cod fillet into the batter, allowing the excess to drip off.

    Fry the Fish

    Carefully add the battered fish to the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Serving

    Plate the Dish

    On a serving plate, arrange the crispy fries alongside the battered cod. Serve with a generous dollop of the prepared tartar sauce.
