Cake Preparation

    Preheat the Oven

    Preheat your oven to 425°F (220°C) to ensure it is hot enough to cook the cakes properly.

    Prepare Ramekins

    Grease four 6-ounce ramekins with butter and dust with flour, tapping out any excess. This will help the cakes release easily after baking.

    Melt Chocolate and Butter

    In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.

    Mix Eggs and Sugar

    In a separate bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is thick and pale.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg mixture while whisking continuously. This will prevent the eggs from cooking.

    Add Dry Ingredients

    Sift the all-purpose flour and salt into the chocolate-egg mixture. Gently fold the ingredients together until just combined.
