    Preheat the Oven

    Preheat your oven to 300°F (150°C) to prepare for slow roasting the pork belly.

    Prepare the Pork Belly

    Rinse the pork belly under cold water and pat it dry with paper towels. Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat.

    Season the Pork Belly

    In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and paprika. Rub the spice mixture all over the pork belly, making sure to get it into the scored skin.

Cooking

    Roast the Pork Belly

    Place the pork belly on a rack in a roasting pan, skin side up. Drizzle olive oil over the top and roast in the preheated oven for about 2.5 to 3 hours, or until the meat is tender.

    Glazing (Optional)

    If you desire a glaze, combine honey, soy sauce, and rice vinegar in a small saucepan. Heat over medium-low until combined. In the last 30 minutes of roasting, brush the glaze over the pork belly every 10 minutes.

    Increase the oven temperature to 450°F (230°C) for the last 20-30 minutes of cooking, allowing the skin to become crispy and golden brown.

Serving

    Once cooked, remove the pork belly from the oven and let it rest for at least 15 minutes. Slice into portions and serve warm.
