Chill glass

Optional but recommended: place the serving glass in the refrigerator or freezer for 5–10 minutes to get it nicely chilled.

Add ice

Add 1 cup of ice cubes to the chilled glass, leaving room at the top for the soda and any float.

Pour root beer

Slowly pour 2 cups of chilled root beer down the side of the glass to minimize foaming. Stop before the glass is about 3/4 full if adding ice cream or whipped cream.

Settle foam

Allow the foam to settle for 15–30 seconds. If the foam rises too much, pause and let it subside before adding more.

Optional additions

Make a float (optional)

If making a root beer float, gently add 2 scoops of vanilla ice cream to the center of the glass after the foam has mostly subsided. The ice cream will create a creamy head.

Add vanilla (optional)

For a richer vanilla flavor, stir 1 teaspoon of vanilla extract into the root beer in the glass before adding ice cream or after pouring, then allow a few seconds for it to integrate.

Top and garnish (optional)

If desired, add about 2 tablespoons whipped cream on top of the float and finish with a maraschino cherry. Serve with a straw and a long spoon.

Serve immediately while the drink is cold and the ice cream (if used) is slightly softened for easy scooping.
