Prepare Base

Make chilled vodka-syrup base

In a large mixing pitcher or bowl, combine 1 cup vodka, 1/2 cup chilled simple syrup, and 2 tablespoons fresh lime juice. Stir to combine. Keep chilled in the refrigerator while you prepare flavor concentrates.

Measure and chill 2 cups plain seltzer in the refrigerator so it's very cold when assembling. Cold seltzer preserves carbonation when mixing.

Prepare Flavor Concentrates

Raspberry concentrate

If using fresh raspberries, macerate 1/2 cup raspberries with 1 teaspoon simple syrup, then press through a fine mesh strainer to yield about 1/3–1/2 cup strained purée. Optionally add a few drops berry extract or 1/4 tsp citric acid to brighten. Keep chilled.

Grapefruit concentrate

Strain fresh grapefruit juice to remove pulp until you have 1/2 cup. If desired, add 1/4 teaspoon simple syrup or a tiny pinch of citric acid to balance bitterness. Chill.

Peach concentrate

Peel and pit ripe peaches, blend until smooth and press through a strainer to collect 1/2 cup purée. Add 1/2 teaspoon simple syrup if fruit is underripe. Chill.

Cucumber concentrate

Peel and core 1 medium cucumber, blend and strain to get 1/2 cup green cucumber juice. Optionally mix in 1/4 teaspoon lime juice and a pinch of salt for balance. Chill.

Assemble Seltzers (per 12-oz can)

Each finished can is approximately 12 oz (360 ml). For four cans you will scale accordingly. Work one can at a time to preserve carbonation.

Measure flavor and base

For each 12-oz can, use roughly 1.5 tablespoons (22 ml) flavor concentrate, 3 tablespoons (45 ml) vodka-syrup base, and fill the rest with chilled seltzer (about 9–9.5 oz / 270–285 ml). These proportions yield around 4.5% ABV and a balanced flavored seltzer. Adjust flavor quantity 1 tablespoon up or down to taste.

Combine gently

In a chilled mixing glass or directly into the chilled can/bottle, add the measured flavor concentrate, then the vodka-syrup base. Top slowly with chilled seltzer to preserve fizz; do not over-stir. Gently roll the can between your hands or stir once with a bar spoon (no vigorous shaking) to combine without losing carbonation.

Taste and adjust

Taste one sample. If too sweet, add a splash more seltzer. If too weak in flavor, add up to 1 teaspoon extra flavor concentrate. If brightness is lacking, add a few drops of fresh lime or 1/8 tsp citric acid and stir gently.

Package & garnish

Pour into chilled cans or bottles, leaving ~1/2 inch headspace. Add garnish as desired: 3–4 raspberries for raspberry cans, a thin grapefruit wheel for grapefruit cans, a peach slice for peach cans, or a cucumber ribbon tucked inside for cucumber cans. Seal cans or cap bottles immediately and keep refrigerated.

Storage & Serving

Store finished seltzers chilled and consume within 3–5 days for best flavor and carbonation. Gently invert or roll before serving if settling occurs; avoid shaking. Serve ice-cold.

Estimated carbonation and flavor may vary by seltzer brand; taste and adjust the concentrate ratios the first time you make each flavor so you can replicate preferred levels next batch.
