Fried Pickle Slabs Recipe
Our twist on this favorite snack will satisfy even the most hopeless pickle addict. We think they're a pretty big...dill. Served with your choice of Ranch or Pelican Sauce

Slice pickles
Drain the large dill pickles and reserve the pickle juice. Pat pickles dry with paper towels. Slice each pickle lengthwise into 4–6 slabs depending on thickness so you have evenly sized slabs about 1/4 inch (6 mm) thick.
Optional extra-brine
For extra tang and crisp, place pickle slabs in a shallow dish and pour 120 ml reserved pickle juice over them. Refrigerate for 15–30 minutes, then remove and pat very dry. If you used pre-sliced pickles or prefer less tang, skip this step.

Prep dredges
Set up three shallow bowls: Bowl 1 — dry mix: combine 1 cup flour, 1/4 cup cornstarch, 1/4 cup cornmeal, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder, 1/2 tsp paprika, and 1/4 tsp cayenne (optional). Mix well. Bowl 2 — wet batter: whisk 2 eggs with 120 ml milk and 60 ml cold club soda or beer (if using) until smooth. Add 2–3 tablespoons reserved pickle juice to the batter for extra flavor, if desired. Bowl 3 — crumb: place 1 cup Panko breadcrumbs in the third bowl.
Dredge technique
Working in batches of 6–8 slabs to avoid crowding, first coat each pickle slab in the dry mix, shaking off excess. Then dip into the wet batter, letting excess drip off briefly, and finally press into the Panko breadcrumbs to fully coat. For an extra-crisp double coating, repeat the wet dip and Panko step once more. Place breaded slabs on a tray on a wire rack while you heat the oil.

Pour approximately 1 liter of neutral oil into a heavy-bottomed skillet or Dutch oven to a depth of about 2–3 inches (5–7 cm). Heat over medium-high until the oil reaches 175°C (350°F). Use a thermometer for accuracy; if you don't have one, a breadcrumb should sizzle and brown in about 45–60 seconds.
Fry in batches
Carefully lower 4–6 breaded pickle slabs into the hot oil without crowding. Fry until golden brown and crisp, about 1.5–2.5 minutes per side (total 3–5 minutes) depending on thickness. Turn once with tongs or a slotted spoon for even color. Maintain oil temperature at 170–180°C (340–355°F), adjusting heat as needed.
Drain
Using a slotted spoon or spider, transfer fried pickle slabs to a wire rack set over a baking sheet or to paper towels to drain. Immediately sprinkle a light pinch of salt over the hot slabs. Let cool 1–2 minutes before serving; they are best served hot and crisp.
To serve
Arrange fried pickle slabs on a platter. Garnish with chopped fresh dill. Serve with Ranch dressing or Pelican Sauce on the side for dipping. Recommend serving immediately while hot and crispy.
Storage note: Leftover fried pickles will lose crispness. Reheat in a 200°C (400°F) oven on a wire rack for 6–8 minutes to re-crisp before serving.
