Method
Pear Syrup (make ahead)
Cook pear syrup
Combine chopped pear, sugar, and water in a small saucepan over medium heat. Bring to a gentle simmer and cook, stirring occasionally, until the pear is very soft and the sugar is dissolved, about 8–10 minutes.
Remove from heat and stir in the lemon juice. Let cool slightly, then transfer to a blender or use an immersion blender and puree until smooth.
Strain the puree through a fine mesh sieve into a jar, pressing on solids to extract liquid. Discard solids. Refrigerate the syrup; yields about 5–7 oz and will keep 7–10 days.
Cocktail Assembly
Chill glass
Place a coupe or rocks glass in the freezer for a few minutes or fill it with ice and water while you assemble the drink to chill it, then discard the ice water before straining.
Shake
In a cocktail shaker, add bourbon (2 oz), elderflower liqueur (0.5 oz), fresh lemon juice (0.75 oz), pear syrup (0.5 oz), ginger liqueur or syrup (0.25 oz), and 2 dashes of Angostura bitters. Add a large handful of ice (about 1 cup).
Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and well diluted.
Strain & finish
Double-strain the cocktail into the chilled coupe or a rocks glass over fresh ice (if using a rocks glass). If you prefer a slightly lighter finish, top with ~1 oz club soda and gently stir once.
Garnish
Thread a thin pear slice onto a sprig of fresh thyme or float the pear slice on the drink and lay the thyme across the rim. Serve immediately.
