    Prepare the Mussels

    Rinse the fresh mussels under cold water, scrubbing the shells to remove any dirt or barnacles. Remove any beards (the fibrous strands) that are attached to the mussels.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced shallots, sautéing until they are soft and fragrant, about 2-3 minutes.

    Add Wine and Mussels

    Pour in the white wine and bring to a simmer. Add the cleaned mussels to the pot, covering it with a lid.

    Steam the Mussels

    Let the mussels steam for about 5-7 minutes, or until they have opened up. Discard any mussels that remain closed after cooking.

    Finish with Parsley

    Once the mussels are cooked, remove the pot from heat. Stir in the chopped parsley and season with salt and black pepper to taste. Serve immediately.
