    Prepare the Chicken

    Cut the boneless chicken breast into bite-sized pieces and season with salt and pepper. Toss with cornstarch until evenly coated.

    Mix the Sauce

    In a bowl, mix soy sauce, rice vinegar, hoisin sauce, and chili paste. Set aside.

    Sauté the Aromatics

    In a large pan or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant.

    Cook the Chicken

    Add the chicken to the pan and stir-fry until cooked through and golden brown, about 5-7 minutes. Remove chicken and set aside.

    Stir-Fry Vegetables

    In the same pan, add remaining oil and add chopped bell pepper and green onions. Stir-fry for 2-3 minutes.

    Return the chicken to the pan, pour the sauce over, and mix well. Cook for another 2-3 minutes until heated through.
