    Prepare the Onions

    Slice the red and yellow onions thinly. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the onions and cook, stirring frequently, until they are caramelized and golden brown, about 20-25 minutes.

    Add Garlic and Stock

    Minced the garlic and add it to the caramelized onions. Cook for another minute until fragrant. Pour in the beef stock and bring the mixture to a simmer. Season with salt and black pepper to taste.

    Prepare the Crostini

    While the soup simmers, slice the baguette into 1-inch thick slices. Brush each slice with olive oil and toast them in the oven until golden brown, about 5-7 minutes at 400°F (200°C).

    Ladle the soup into oven-safe bowls. Top each bowl with a few slices of toasted baguette and a generous amount of Swiss cheese.
