Fondue Preparation

Prepare the Cheese Mixture
In a large mixing bowl, combine the shredded Gruyere and Swiss cheeses. Toss with a tablespoon of cornstarch to prevent clumping.

Heat the Beer
In a fondue pot or a heavy-bottomed saucepan, heat the Pecan Brewery Aggie Amber Ale over medium heat until it's simmering but not boiling.

Melt the Cheese
Gradually add the cheese mixture to the simmering beer, stirring constantly until the cheese is completely melted and smooth.

Add Chiles
Stir in the diced Hatch green chiles and continue to cook for another minute to incorporate the flavors.

Transfer the melted cheese mixture into a fondue pot. Serve with cubed steak, apple slices, and cubed French bread for dipping.
