Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, transfer it to a large bowl.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour this mixture over the warm rice and gently fold it in. Allow the rice to cool to room temperature.

Prepare the Salmon
Slice the fresh Ahi salmon into thin pieces, about 1/4 inch thick. Make sure to cut against the grain for tenderness.

Form the Nigiri
Wet your hands to prevent sticking. Take a small amount of sushi rice (about 2 tablespoons) and form it into an oval shape. Place a slice of Ahi salmon on top of the rice.

Serve
If desired, serve with a small dollop of wasabi and a side of soy sauce for dipping. Optionally, wrap a thin strip of nori around the nigiri for added flavor.
