    Prepare the Marinade

    In a bowl, combine soy sauce, sesame oil, minced garlic, rice vinegar, honey, Szechuan peppercorns, salt, and black pepper. Mix well until the honey is dissolved.

    Marinate the Tuna

    Place the yellowfin tuna steaks in a resealable plastic bag or shallow dish. Pour the marinade over the tuna, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes.

    Prepare the Scallions

    While the tuna is marinating, finely chop the scallions and set aside.

Cooking

    Cook the Tuna

    Heat a grill or skillet over medium-high heat. Remove the tuna from the marinade and discard the marinade. Grill or sear the tuna for about 2-3 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Prepare the Gochujang Sauce

    In a small bowl, mix the gochujang with a bit of water to thin it out if needed. Adjust to your desired consistency.

    Serve

    Once cooked, remove the tuna from the grill or skillet. Plate the tuna steaks, drizzle the gochujang sauce over the top, and garnish with the chopped scallions.
