Method

Preparation of Tuna

  1. 1

    Dice the Ahi Tuna

Using a sharp knife, dice the fresh Ahi tuna into small cubes, about 1/2 inch in size. Ensure that the tuna is sushi-grade and very fresh.

Preparation of Fruits

  1. 2

    Prepare the Avocado

Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork, leaving some texture.

  2. 3

    Prepare the Mango

Peel the ripe mango, remove the pit, and dice the flesh into small cubes, similar to the tuna.

Making the Sauce

  1. 4

    Combine Sauce Ingredients

In a small bowl, whisk together the soy sauce, sesame oil, lime juice, honey, sesame seeds, and a pinch of salt and black pepper to taste.

Assembly

  1. 5

    Combine Ingredients

In a large bowl, gently combine the diced Ahi tuna, avocado, and mango. Pour the sauce over the mixture and gently toss to combine without mashing the ingredients.

  2. 6

    Plate the Tartare

Using a ring mold or by hand, carefully plate the tuna tartare mixture onto serving plates. Garnish with chopped green onions and microgreens or edible flowers for an elegant touch.
