Prepare the Potatoes

Wash and Cut
Wash the Russet potatoes thoroughly to remove any dirt. Cut each potato into evenly sized fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a large bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and will make the fries crispier.
Fry the Potatoes

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the temperature is correct.

Dry the Fries
After soaking, drain the fries and pat them dry with a kitchen towel. This is an important step to avoid oil splatter and achieve crispiness.

Carefully add a batch of the dried fries to the hot oil, ensuring not to overcrowd the pot. Fry for 4-5 minutes until golden brown.
