Prepare the Patties
In a mixing bowl, combine the ground beef with salt and black pepper. Divide the mixture into 2 equal portions and shape them into balls. Press each ball down to form patties that are slightly larger than the burger buns, as they will shrink while cooking.

Cook the Patties
Preheat a skillet or griddle over medium-high heat. Once hot, add the patties to the skillet. Cook for about 3-4 minutes on one side, then flip. Immediately place 2 slices of American cheese on each patty and cook for an additional 2-3 minutes, or until the cheese is melted and the patties are cooked to your desired doneness.

Make the Jam
Add brown sugar and balsamic vinegar to the cooked onions. Stir to combine and continue cooking for another 10-15 minutes, stirring occasionally, until the mixture is thick and jam-like. Remove from heat and set aside.

Fry the Potatoes
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Carefully add the potato sticks in batches, frying for 4-6 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
