Burger Patties

    Prepare the Patties

    In a mixing bowl, combine the ground beef with salt and black pepper. Divide the mixture into 2 equal portions and shape them into balls. Press each ball down to form patties that are slightly larger than the burger buns, as they will shrink while cooking.

    Cook the Patties

    Preheat a skillet or griddle over medium-high heat. Once hot, add the patties to the skillet. Cook for about 3-4 minutes on one side, then flip. Immediately place 2 slices of American cheese on each patty and cook for an additional 2-3 minutes, or until the cheese is melted and the patties are cooked to your desired doneness.

Onion Jam

    Cook the Onions

    Thinly slice the yellow onions. Heat olive oil in a pan over medium heat. Add the onions and a pinch of salt, cooking for about 10-15 minutes until they are soft and translucent.

    Make the Jam

    Add brown sugar and balsamic vinegar to the cooked onions. Stir to combine and continue cooking for another 10-15 minutes, stirring occasionally, until the mixture is thick and jam-like. Remove from heat and set aside.

Fries

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into sticks or wedges, about 1/4 inch thick. Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with a paper towel.

    Fry the Potatoes

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Carefully add the potato sticks in batches, frying for 4-6 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.

Burger Assembly

    Assemble the Burger

    Toast the burger buns on the skillet for 1-2 minutes until lightly golden. Place one cheese-covered patty on the bottom bun, top with a generous spoonful of onion jam, then add the second patty on top. Finish with the top bun.

    Serve

    Serve the smash burger hot alongside the freshly made fries. Enjoy your delicious classic double patty burger!
