Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water and 1 tsp of salt to a boil. Gradually stir in the Marsh Hen grits and reduce heat to low. Cook uncovered for 20-25 minutes, stirring occasionally, until thickened.

    Finish the Grits

    Once the grits are cooked, stir in 2 tbs of butter and 1 cup of cheddar cheese until melted and creamy. Set aside and keep warm.

Shrimp & Sausage Preparation

    Cook the Sausage

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add the lamb merguez sausage and cook for about 5 minutes, turning occasionally, until browned and cooked through.

    Sauté the Shrimp

    Add the minced garlic and red pepper flakes to the skillet with the sausage. Sauté for 1 minute until fragrant. Then, add 1 lb of Florida shrimp and cook for 3-4 minutes until they turn pink and opaque.

    Add the Sauce

    Pour in 1 cup of diavolo sauce, stirring to combine. Let it simmer for about 2-3 minutes to heat through. Remove from heat and stir in 2 tbs of chopped fresh parsley.

Assembly

    Serve the Dish

    Spoon a generous amount of the creamy grits onto each plate. Top with the shrimp and sausage mixture, ensuring a good amount of sauce covers the grits. Garnish with additional parsley if desired.
