Method

Preparation

  1. 1

    Prepare the Shrimp

In a large pot, bring salted water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove from heat, drain, and immediately place the shrimp in an ice bath to stop the cooking process. Once cooled, peel and devein the shrimp. Set aside.

  2. 2

    Prepare the Oysters

Carefully shuck the oysters using an oyster knife. Place them on a platter with ice, ensuring they stay upright to retain their juices.

  3. 3

    Prepare the Tuna

Dice the yellowfin tuna into small cubes (about 1/2 inch). Place in a bowl and season with sea salt and black pepper. You may also add a splash of lime juice for extra flavor if desired.

  4. 4

    Prepare the Ceviche

If the ceviche mixture is not pre-made, prepare it by marinating diced fish with lime juice, chopped onions, tomatoes, cilantro, and jalapeños for about 30 minutes. Otherwise, ensure the ceviche is ready to serve.

Assembly

  1. 5

    Assemble the Seafood Tower

On a large serving platter, begin layering the seafood. Start with the oysters as the base, then add a layer of shrimp, followed by the ceviche and finally the diced tuna. You can create separate sections for each seafood item or stack them in a tower format.

  2. 6

    Garnish and Serve

Garnish the seafood tower with lemon wedges, fresh herbs, and a small bowl of cocktail sauce. Serve immediately with additional lemon wedges and cocktail sauce on the side.
