Mussels Preparation

    Clean the Mussels

    Rinse the PEI mussels under cold water to remove any sand or debris. Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

    Add Wine and Mussels

    Pour in the white wine and bring it to a simmer. Add the cleaned mussels, fines herbes, salt, and black pepper. Cover the pot and cook for about 5-7 minutes, or until the mussels open up.

    Serve

    Once the mussels are cooked, remove from heat and serve them in a bowl with some of the broth. Drizzle with additional olive oil if desired.

Fries Preparation

    Prepare the Potatoes

    Peel the potatoes (if desired) and cut them into fries. Soak the fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries in batches to the hot oil. Fry for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt to taste.
