Preparation

    Prepare the Filet Mignon

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Season the Meat

    Pat the filet mignon dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until hot but not smoking.

    Sear the Filet Mignon

    Carefully place the filet mignon in the skillet. Sear for about 4-5 minutes on one side, until a golden-brown crust forms. Do not move the steaks during this time.

    Flip the Steaks

    Using tongs, flip the filet mignon over and sear the other side for another 4-5 minutes for medium-rare. Adjust cooking time based on your desired doneness.

    Add Optional Ingredients (if using)

    If desired, add the sprigs of fresh rosemary and butter to the pan during the last minute of cooking. Spoon the melted butter over the steaks.

Resting

    Rest the Steaks

    Remove the filet mignon from the skillet and transfer to a cutting board. Tent loosely with foil and let rest for 5-10 minutes before serving. This helps the juices redistribute.
