Shucking the Oysters
Carefully shuck the oysters using a clean oyster knife. Hold the oyster with a towel to protect your hand, insert the knife into the hinge of the oyster, and twist to open. Remove the top shell and loosen the oyster from the bottom shell, keeping the oyster in its liquor.

Place the shucked oysters on a serving platter. If desired, use crushed ice to stabilize the oysters and keep them chilled.

In a small bowl, combine the finely minced shallots, red wine vinegar, extra virgin olive oil, chopped parsley, lemon juice, sea salt, and black pepper. Whisk together until well combined.
