Melt the Chocolate and Butter
In a medium saucepan, combine the chopped bittersweet chocolate and unsalted butter. Heat over low heat, stirring constantly until the mixture is completely melted and smooth. Remove from heat and allow to cool slightly.

Whisk the Eggs and Sugar
In a large mixing bowl, whisk together the large eggs, large egg yolks, and granulated sugar until the mixture is thick and pale, about 3-4 minutes.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking continuously until fully combined. Add the vanilla extract and mix well.

Add Dry Ingredients
Gently fold in the all-purpose flour and a pinch of salt until just combined. Be careful not to overmix.

Fill the Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Baking

Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

Cool and Serve
Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto plates. Serve immediately, optionally with a scoop of vanilla ice cream.
