Calamari Preparation

    Clean the Calamari

    Rinse the fresh calamari under cold water. Remove the head and innards, and cut the body into rings about 1 inch thick. Set aside.

    Prepare the Breading Station

    In a bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, beat the eggs. In a third bowl, place the breadcrumbs.

    Bread the Calamari

    Dredge each calamari ring in the flour mixture, dip it in the beaten eggs, then coat it with breadcrumbs. Place the breaded calamari on a plate.

    Heat the Oil

    In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the breaded calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, oregano, salt, black pepper, and red pepper flakes. Bring to a simmer.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.

    Finish with Fresh Basil

    Remove the sauce from heat and stir in the fresh basil leaves.
